Leftover Celery idea


Do you have a lot of leftover celery from the holidays? It's sort of a silly question but I had 3 bunches of it for some reason in my refrigerator. You can make cream of celery soup out of it and use it all year long. It works just as good as using cream of mushroom soup in casseroles and is much cheaper to make instead of buying the cans. Here is my recipe. You will need a very large stockpot.

2 cups butter (4 sticks)
2 cups flour
8 cups milk
8 cups water
2 cups celery
3/4 cup grated parmesan cheese
1/8 cup salt
2 tsp black pepper
2 tsp onion powder
1 tsp paprika

Melt butter over medium heat. Stir in flour till it thickens. Slowly stir in milk and water. Cook until mixture thickens stirring constantly. Add remaining ingredients and simmer another 5 minutes. Cool completely. Freeze 2 cups of soup on 1 quart freezer bags. Makes 8 servings.

I still feel good about my list of goals even though I didn't cross it all off. I planned a pretty big list but I am still learning my new job, so it's a good lesson that maybe I over extended myself. Plus I hurt my back somehow and that totally derailed my exercise plans. I have some quiet time to myself for the next two weeks so I am hoping to get a lot accomplished.

Getting back on track

I have virtually abandoned all of my plans and goals for the year. When my dad died it just seemed enough to get out of bed every day and do what I had to do just to get by. I still feel sad a lot and while I wish it could be different I am still here, and my dad is with Jesus. I know my dad would not want me to be stuck like this. I must move forward because my dad would be the first one to tell me that. He had so many hopes and dreams and most of them never quite turned out. Was it just bad luck or bad planning? I kind of think a lot of it was just bad planning. He was very proud of my successes. I want to continue to work hard to have more of them. So here goes. Taking inventory on what I started out with this year.

Improve wardrobe: I have actually bought more clothes this year than I have bought it years, so that goal is going well. I will continue to add to it.
Take pills daily:  Well it isn't perfect, but it's certainly much better, so I will count that as another success.
Complete school projects: I have a total of 4 of them. One has been completed so I have made a little progress, and I hope to do more soon.
Workable budget: I have drafted one, but I think it still needs a little more fine tuning, and I still need to go over it with my husband, but most of it at least is on paper.
Read new scripture daily: This has been hit and miss. I did really well for a while and then kind of lost it. I started again this week with my daily plan that has a new scripture daily so this should get back on track.
Read at least 3 books on personal development: I had some specific books I was going to read, but my dads death changed everything. I did do a bible study called The Resolution for Women so that counts as one book. I also read Mary Beth Chapmans book Choosing to See, When I lay my Isaac down, and I am about to begin another study on Crazy love. Not the books I had planned to read, but I think they still count.
Increase water and cut back on soda: This one has been hit and miss so I am going to try again to at least one bottle of water a day.
Eat fruit daily: I have not done well with this one at all, but we decided to pack at least half of my sons school lunches this year so I am hoping to do better as I plan for his lunches with getting fruit in daily for myself.
Plan 2-3 vacations: I actually took a vacation recently and I am planning another.
Improve organization: I started out doing the 52 week challenge. While a lot of that went out the window when my dad got sick, and I never went back to it I still did accomplish quite a bit. My house is clean and fairly well organized right now. I got my son's room cleaned up and better organized along with my bedroom. I also made another bedroom into a home office and cleaned all the junk out of that. I got a lot of kitchen organization done as well. Not too bad.
Read at least 3 new books on money: Again, not the exact ones I had planned on but I still read quite a bit. I read the money saving moms book on budgeting, Advanced penny pinching, The cheapskates guide to grocery savings, Coupon millionaire, and The simple dollar. Unfortunately I didn't learn much from any of them. Most of it I already knew.
Read at least 3 new books on marriage: So far I did read money and marriage.
Read at least 3 new books on parenting: So far I read Parenting with love and logic.
Spend at least 15 minutes with my child alone: I have done this most of the time.
Encourage my husband daily: This one has been hit and miss. I did the 30 day challenge but would like to do it again.
Calendar for scheduling: I have done this regularly, but getting my husband to participate has been a little more difficult, but the good news is we are communicating about schedules better so that is working.
Help my son Zach plan for his new baby: I have done the best with this goal. We purchased many lovely things for the baby who has now been born, and she had everything she needed. We also had a wonderful blessingway/baby shower for her mom that was a lot of fun.
Find a new job: This was one of my most important goals this year and I landed the best job I have ever had in my entire career.
There are about a dozen items I have not even attempted but the year isn't over either. I am grateful I looked at my list because I realized I have accomplished far more than I realized. I am going to start fresh in September which feels right since it's my birthday month.

I made this lovely breakfast this morning with my day old baguette. All you have to do is create a trench in the middle, fill with ingredients of your choice and place under broiler till the cheese is just melted. Only takes a few minutes.

Todays shopping trip

Wow, what a day. Honestly I prefer to shop in the comfort of my own home usually, but I really needed to go out today so I decided to reward myself with some good deals! Here is how it turned out. Started out at Winco for some food. Bought 7 bottles of terriyaki sauce for $3.50, 2 smoked sausages for $2.56, and a zone bar for free. Then I went to CVS for my free full size bottle of shower gel. From there I went to Home Depot where I bought 2 large rose bushes for $20 (one was free) on to Michaels for my free bottle of sugar sprinkles, and then to Joannes for my half price fabric and thread along with my $5 off coupon. Total cost was about 56.00 and discounts were 36.00 spent a total of $20. Now I am going to collapse!

On March 20th my dad passed away. This has been a very sad time for our family so that is why I have disappeared. My plans for my goals have gone out the window too. All I feel I can do right now is get through the day and do what I have to do. Please pray for our family as we struggle with our loss.

Kitchen organization

I feel so accomplished to have my kitchen organized. I'm happy to say a lot of it was already done, but it did inspire me to do a few things like get my spices in order once and for all. Having them organized will actually be a money saver because it will stop me from purchasing duplicates. I had at least 10 duplicates but because of the way they were organized before it made it impossible for me to keep track of it. I also put all of my spices on my phone using the ap out of milk. That way when I am out shopping I know exactly what I have at home. I also did a pantry list, and a freezer list on the same ap for the same reason. It also inspired me to look for other ways to organize further like my new K cup holder for my new Keurig coffee pot. I did order a lid organizer for my cupboards and it was too big, plus when I returned it in the same box they sent it to me in the company claimed it was damaged when they received it. Not to mention it cost me almost as much to ship it back as I should have been refunded. I really shouldn't have returned it but I just didn't want the clutter! So that one was a failure which cost me far more than I care to admit. Oh well, live and learn. I also discovered some new cabinet organizer for pots and pans I am dying to buy. Must save up for that but I did find a cheaper version on ebay. As soon as I save up the money that will be my next purchase! One thing I would like to do that will take me a long time is to compile one cookbook of recipes I use all the time rather than me pulling out cookbooks when I do my meal planning. Even though I know where all the recipes are it would be nice to have it all in one place particularly when I am feeling uninspired. I think I will try to work on that after this year of organization is over. Next week we start on my filing system which is horrible right now. Wish me luck!

Paying off Debt

We have been paying off a big debt for the last 10 years. I have to admit I felt like it would never get paid. I found out the other day that it will be paid off this year. What! Are you kidding me? It was a 20,000 debt. The amount felt insurmountable. I felt the same way that the picture above looks like. My husband reminded me that we had been paying 2,000 a year for the last 10 years. I had gotten so used to the bill that it never occurred to me that someday it would actually be paid! How did that happen? It has been 10 years but at the same time it feels like yesterday almost. I cannot tell you what it feels like to know that it is actually almost paid! I have read lots of stories on how people have paid off huge debts but I have to admit I had some doubts that I could be one of them. I almost cried the other day when after  having a meeting about the debt I went out to my car to find a parking ticket on it. I thought to myself, are you kidding me? We do all the right things and this is what I get? I'm not going to lie. It isn't easy to do the right things. It isn't easy to say no to things I would like to do, places I would like to go, and things I would like to buy.  Of course if I hold myself accountable it's because I didn't always do the right things in the beginning, and that is how I got into trouble in the first place. I have read stories about others who got into trouble with debt, turned their lives around began paying it off, and then got blessed somehow to pay it off early. That hasn't happened to us. The reason why I'm pretty sure it hasn't happened to me is because God knows I am not ready for it. I still have bad habits to change, and things I still need to work on. Most of all I think I still have this debt mind set or I wouldn't have been so surprised to find this bill is almost paid off.  Thank you God for the work you continue to do in me, so that when the debts are finally gone I will be worthy of the stewardship of taking care of the money.

I also read The money saving moms budget which was on my reading list for the year. Not on my reading list but I did read The Simple Dollar, and I Surrender All which was still along the lines of the personal development I am working on this year. I still struggle with taking my pills daily but it's getting much better. I had the additional challenge of getting everything out of Kaiser as well back to CVS but Ken told me my pills are now ready. Encouraging my husband daily is really hard for me because saying encouraging things is something that really takes effort for me. This was probably the hardest thing I had to do, and I think when I am done I am going to do it again. It sounds terrible to say that, but words of encouragement is not my love language but it is my husbands so I have to try hard at it. I completed 1 project but it felt so good I hope to do at least the same this month or better. I asked for help from a friend of mine and it was so encouraging for me along with setting the goal. I would not have done it otherwise. I bought 8 new blouses for my new office job, I went to Goodwill so it only cost $24! I met with a friend who is a master gardener who gave me advice on planning my garden, so I have a better idea of what to do. I met all my organizational goals and I can't tell you how excited I am about the spices. I will post pictures on that later. The big disappointment was the financial goal meeting because my husband just didn't understand there was a deadline! He is new to the monthly goal project but he promised to meet with me on Friday. All in all it was a productive month!

Pork with cornbread stuffing $6 dinner

Pork chops with Cornbread stuffing

Pork rib chops $4 (on sale)
Cream of mushroom soup .35 (on sale with coupon)
1/4 cup melted butter .40
16oz pkg frozen broccoli, cauliflower, and carrots $1
1 bag of mrs cubbins corn bread mix .65 (on sale with coupon)

Stir together soup, melted butter, vegetables, and stuffing. Transfer to lightly greased crockpot. Brown pork chops in skillet and place on top of stuffing mixture. Cook 5-6hrs on low, or 2 1/2-3 hrs on high.

Save Mart Menu's

I have an idea of planning weekly meals using fresh healthy ingredients to make life easier and less expensive. I'm going to offer a free 30 trial to see what you think. Either way I promise by sticking to the sales, and planning your meals it will be a big savings. The 99cent store dinner

You can make a great inexpensive dinner almost entirely from the 99cents store for under $10!
Here it is:

Beef Stroganoff Casserole

1lb ground beef $3 (costco)
1/4 tsp salt
1/8 tsp black pepper
8oz fresh mushrooms $1
2tsp minced garlic .10cents
1/4 cup beef broth .20cents
1 can cream of mushroom soup $1
1/2 cup sour cream .50cents
1 tbsp dijon mustard
4 cups cooked egg noodles $1

About $7 total for all ingredients. Reduce your cost even more by making it a vegetarian meal by using more mushrooms in place of ground beef. I purchased all above ingredients except for the ground beef at the 99cent store. You can add frozen vegetables to round out the meal for another $1, or I also found cole slaw mix and salad mix for $1 making your total $8 that will easily feed a family of 4.

Preheat oven to 350. Place beef in skillet and add salt and pepper. Cook over med high heat until brown. Remove beef from skillet and set aside. Add mushrooms, and garlic till mushrooms are tender. Add beef broth, reduce heat to med low for about 3 minutes. Remove from heat, stir in soup, sour cream, and mustard. Return beef to skillet. Place noodles in a 13x9 baking dish lightly greased. Pour beef mixture onto noodles and stir until well coated. Bake for 30 minutes.

Free entrance to Yosemite on Jan 14-16

In celebration of Martin Luther King, Jr. Day, Yosemite National Park will offer free admission into the park starting Saturday, January 14 through Monday, January 16, 2012. The fee free waiver is for all visitors in honor of the holiday weekend.
Fees being waived for Martin Luther King, Jr. Day weekend include the fees associated with entrance into the park only. All other fees associated with camping, lodging, or activities within the park are not waived. The fee waiver is good for the Martin Luther King, Jr. Day weekend only.
Visitors coming to the park over the fee free weekend are urged to be aware of the possibility of changing weather and precipitation. Ice on the roadways may be present throughout the park. For updated 24-hour weather and road information please call, 209-372-0200.
